Biscuit Batter Frame

The frame is an indispensable tool to make perfect Joconde, biscuit batter cake and sponge cake layer insert in a minute. The biscuit frame is made of stainless steel and is available in 9 standard thicknesses.

Install the frame on a baking mat, a Silpat or a parchment sheet, spread the biscuit batter inside the frame and smooth the biscuit batter with an offset spatula or a ruler. Remove the frame, slide the biscuit batter onto a baking sheet pan and place it in the oven. You can bake the biscuit batter in the stainless steel biscuit frame if you prefer.
